How do you design a wedding cake?

Designing a wedding cake is one of the most personal and creative parts of my job as a cake maker. Its something I genuinely love doing, taking all the excitement, inspiration and plans you bring and turning these into a cake design that truly reflects you as a couple and your wedding day.
Every wedding cake I make begins not with flour and eggs, but with your story. And here’s how I design your beautiful wedding cake.
Designing Jo & Mark’s Wedding Cake: From Ideas to Something Truly Theirs
When Jo and Mark came to see me for their consultation, they arrived with that lovely mix of excitement and “we have some ideas, but we’re not quite sure how it all comes together yet.” Which is the perfect place to begin.
They brought along a moodboard filled with soft pinks and warm coral tones, layered with romantic details—think old English roses, delicate lace, and abundant florals. Their venue, Hanbury Manor in Ware, also set the tone beautifully. It’s such a stunning, historic setting and it immediately gave us a clear direction for the cake—something elegant, soft, and full of detail, but still relaxed enough to suit their intimate celebration of 70 guests.

We spent time chatting through their ideas, pulling out the elements that really mattered to them. It wasn’t just about colours or flowers—it was about how they wanted their day to feel. Light, simple and full of personality.
From there, I guided them through a few cake styles that would complement both their theme and the setting. We talked about proportions and size—not just to serve their guests comfortably, but to make sure the cake would sit perfectly within the space at Hanbury. A cake should always feel like it belongs in the room, not just placed in it.
The design Process
After our consultation, I took everything we’d discussed and began designing their cake. This is where all those ideas start to take shape. I carefully considered their colour palette, the softness of their florals, and those beautiful lace-inspired details. Every element was chosen to reflect their theme while still feeling balanced and refined.

I created a hand-drawn, painted design for them, bringing together tiers with elegant structure, soft textures, and carefully placed floral details inspired by old English roses. The aim was to capture that bright, romantic feel they loved, while keeping it timeless and in harmony with their venue.
The Fine Details
From there, it’s all about bringing the design to life—choosing the perfect finish, refining colours, and creating the handmade sugar flowers that echo their chosen blooms.

Jo and Mark’s cake is a perfect example of how a few ideas, a beautiful venue, and a relaxed, collaborative consultation can turn into something completely personal. A cake that doesn’t just look the part—but feels like them.
